Brasserie Nouvelle is a modern brasserie by the waterfront at Tjuvholmen.

At Brasserie Nouvelle, our menu is rooted in the traditions of the classic brasserie, but not limited by them. Alongside beloved classics, you’ll find dishes inspired by three chefs who have spent decades cooking, tasting, and refining their craft.

Led by renowned Scandinavian chefs Björn Svensson, Sven Erik Renaa, and Øyvind Dalelv, we create a relaxed setting for great food, exceptional drinks, and long evenings shared with good company around the table.

Tres Amigos!

For years, they have shaped Scandinavian gastronomy through their own restaurants, kitchens and ideas. Now, longtime friends Björn Svensson, Sven Erik Renaa and Øyvind Bøe Dalelv finally come together in the same kitchen to cook side by side.

Björn Svensson

Swedish-born Björn has been part of Oslo’s restaurant scene since the late 1990s and is one of Norway’s most recognised chefs and restaurateurs. He has earned Michelin stars at several restaurants he has personally opened, including Oscarsgate, Fauna, Galt and Schlägergården.

With experience from elBulli, Restaurant Gordon Ramsay, Bagatelle and Restaurant Oro, Björn is known for combining Nordic ingredients with classic French techniques, always with clean flavours and exceptional precision.

Sven Erik Renaa

Sven Erik is from Trondheim and runs RE-NAA in Stavanger, one of only two restaurants in Norway to hold three Michelin stars.

He also has extensive experience with the Norwegian national culinary team and is known for his uncompromising approach to quality, craftsmanship, and flavour.

Øyvind Bøe Dalelv

Øyvind is from Bodø and draws much of his inspiration from the pure ingredients of Northern Norway — from the sea and the mountains.

He has experience from Statholdergaarden, Geranium and the Norwegian national culinary team, and was also part of launching Michales. In addition, he is co-owner of Flamme Burger.

Eyvind Hellstrøm, a longtime friend of ours — and soon a familiar face around the brasserie — Eyvind Hellstrøm is one of the most influential figures in Norwegian gastronomy.

And Terje Ness. With decades of experience and a deep love for classic cooking, Terje Næss represents the warm, generous spirit of Scandinavian hospitality. A respected chef, mentor, and friend around the table.
